Bring the big stuff

Give the cookout somewhere to land.

Think beyond the grill: preparation, serving and clearing need space too.

Work backward from the serving table.

Decide where finished dishes, plates and utensils will go before the cooking starts. A clear serving line helps guests find what they need without crowding the cook. Keep a separate working area for preparation and follow appropriate food-handling guidance for the menu.

Match the tools to the job.

A wide board or tray is useful only if it fits the surface and can be handled comfortably. Measure the work area and storage space, then consider the weight of the loaded piece. Proposed concept dimensions are not a substitute for checking a final product’s specifications.

Leave a landing spot for the last round.

Reserve space for used serving pieces and a place to collect rubbish. Tell a helper where the spare cups and utensils live. The best part of a generous setup is having enough room to keep the evening moving when the first spread is gone.
